I created these protein balls for my husband. I’m unable to eat cashews to due food sensitivities, so these are just for him.
I received a text message from my hubby today “Thank you for making the protein balls. They’re the best… use the same recipe. It’s perfect. Write it down: P blog it!” So here you are, getting this recipe at my husband’s request.
1 Cup Soaked Cashews (soaked for 4+ hours)
¼ Cup Coconut Flakes
1/3 Cup additional Coconut Flakes (ground into a powder)
2 Tbsp Chia Seeds
2 Tbsp Protein Powder
¼ tsp Sea Salt
Toss all the ingredients (except the 1/3 Cup of ground coconut flakes) into a food processor and pulse until gooey “dough”
Divide the “dough” into 10 portions and roll into circles.
Roll the balls in the ground coconut flakes.
Keep in the fridge or freezer until you eat these yummy treats!
